Cucumber-Tomato-Onion Salad

Vidalia onions are expected to appear in markets around the middle of April. Try them in this delicious fresh salad recipe from The Teaching Farmers of Newnan’s Country Gardens Farm.

Ingredients:
1 cup diced fresh tomato
1/4 – 1/2 cup diced onion  (if you like more of a “bite,” try red onion)
1 cup diced cucumber
1/2 cup olive oil
1/2 cup red wine vinegar or apple cider vinegar
Salt & Pepper to taste  (about a teaspoon of each)
Herbs for flavor:  Choose one; about 3 teaspoons minced.  Adjust for your preference.
Fresh dill
Fresh cilantro
Fresh basil

Directions:
Toss all veggies with vinegar and oil.  Season with salt and pepper and herb of your choice, if you like.  Best if refrigerated overnight or at least an hour before serving.
