Roasted Sweet Pumpkin
Cooking time: 15-20 minutes
Serves: 4
Ingredients
2 cups diced pumpkin, seed and skins removed
2 tablespoons pecan oil (you may use canola or coconut oil instead)
½ teaspoon pumpkin pie spice
1 tablespoon sugar
Honey
Directions
Preheat oven to 375°.
In a bowl, toss pumpkin with pecan oil. Combine sugar and pumpkin pie spice in a separate bowl, then sprinkle over pumpkin, tossing to coat. Place on aluminum foil lined baking sheet. Bake for 15 to 20 minutes or until tender. Drizzle with honey before serving.
