It’s the peak of the strawberry season in Georgia. Try this delicious vinaigrette that features those sweet red berries found in grocery stores and farmers’ markets everywhere:
Strawberry Vinaigrette Dressing
Ingredients:
1/3 cup mashed Georgia strawberries
1/2 cup olive oil
5 Tbsp Balsamic vinegar
3 Tbsp sugar
1 Tbsp fresh lemon juice
1 Tbsp cherry juice
Salt and pepper to taste
1 7-ounce bag mixed salad greens
1 cup crumbled feta cheese
1 cup toasted Georgia pecans
1-3/4 cup sliced Georgia strawberries
Directions:
1. Whisk together the first 7 ingredients
2. Combine salad greens with cheese, pecans and sliced strawberries.
3. Pour the desired amount of dressing over salad and toss. Serve immediately. Dressing can be made ahead of time and chilled until ready to use.
